You give a lot of importance to the ingredients. How are they chosen? What is the most requested dish at the moment?
It’s quite fundamental to our business that priority is given to first choice farm fresh organic local and international seasonal ingredients. Our chefs visit local farmers markets on a regular basis, to purchase the highest of quality and we also import some of the finest produce that my homeland has to offer.
The most requested dish is our “Bucatini alla Carbonara” 36 month aged prosciutto, black pepper and to finish it off a slow poached egg.
