What cooking advice would you give to people who can’t leave home at this time because of the Coronavirus emergency? Any simple dishes easy to prepare at home?
Clearly to use what you have without leaving home. This is a dangerous time to leave home and cooking has always been something to bring us all together. I have three young girls and have been making lots of soups and sandwiches for them. We also made some meatballs the other night which are fun for everyone to make together.
3 cups cream
2 loafs white bread diced
5# Veal
5# Pork
5# Beef
2 bunches parsley chopped
15 eggs
20 cloves garlic minced
2 T salt
3 T black pepper
4# Ricotta cheese
8 Cup parmesan cheese
Mix cut bread and cream together and sit for 5 minutes.
Add the rest of the ingredients to the mixing bowl and mix together.
Weigh balls of 2.5 oz and place on sheet tray with parchment paper.
Cook for 25 minutes at 400 degree oven.
